Some trips end and you’re ready for the next one. Belize isn’t one of those — this is the trip we keep pulling back up in our camera roll, months later, when we need a reminder of why we do this.

We stayed at Ramon’s, right in San Pedro, and the diving alone would have been enough. Mayan Princess, San Pedro reef, Tackle Box, Esmeralda, Victoria Canyons, Ramon’s Canyon — six sites, six completely different moods, and somehow every single one gave us a reason to talk over each other back on the boat. That’s the sign of a good dive trip: when nobody can agree on which dive was the best one.

But Belize isn’t just about what’s underwater. It’s the golf cart rides out to Secret Beach with the wind actually doing something useful for once. It’s fry jacks in the morning and ceviche that ruins you for ceviche everywhere else. It’s the kind of place where “what’s the plan tonight” has six good answers — live music at Palapa, trivia for a good cause at Toast, or just a Chicken Drop that somehow turns into the highlight of the week. If you’re there between October and February, do not skip the conch — that’s the whole season right there, and San Pedro does not waste it.

None of that shows up in a packing list. It’s the stuff you don’t know to miss until you’re home and craving a Belize Chocolate Company salted caramel with no idea where to find one.

So — this one’s less an announcement and more an honest confession: we’re already dreaming about going back.
